Hey Everyone! Sous Chef Geo here, wishing you all health and long life. For the moment, the Kaido Kitchen is closed and quiet as we figure out what happens next. As we are watching the way business is being conducted change before our eyes, I am wondering (me personally) what do You the community need? I know that Kaido Japanese Restaurant has been a Special Occasion spot for many loyal customers for many years; sushi might be your luxury item; the current state of emergency ...changes all of that. How can we continue to serve you, and nourish you and your loved ones in the uncertain times to come? Please keep in mind we are a Japanese Kitchen with the full breadth of traditional Japanese Cuisine at our fingertips; not just sushi rolls, but teriyaki, sukiyaki, tonkatsu; a wealth of dishes grounded in simplicity and practicality. So, how often do you think you might take out delicious handmade Japanese food if you could order easily and pick it up or have it delivered in a safe and convenient. How many mouths are you feeding? How much do you budget for a typical take out dinner? I'm really interested in the communities needs and desires more than a list of "what you should dos" if that makes sense. How important is responsible packaging to you, or organic, even local ingredients? (considering many of these things can increase the cost of production) Would a monthly subscription service, similar to a CSA, be a practical solution for you? It would certainly help us. Kaido Japanese Restaurant is now serving local farm fresh quail eggs. Delicious on top of tobiko nigiri or uni (when available). Add one to a Premium Kaido Shooter, or if you're a purist or new to quail eggs, try a simple Quail Egg Shooter; ponzu jure, tobiko (flying fish roe) and scallions, served with a sake or shyochu chaser. Raw eggs are believed to nourish the very foundations of immunity; perfect support during flu season! Shoutout to Stellar Roots Farm in Penn Valley for the beautiful eggs!!

A satisfied guest shared this photo from tonight's Pop-up Dinner on Instagram. Pictured is a small Unagi Donburi with Sancho pepper accompanied with Shiitake Dashi Soup with jeweled roots and Yuzu Pepper paste. Our first Pop-up Dinner was a success. We sold out our limited seating, and everyone was delighted and left with full bellies, asking about the next one.

We have Saba!! This beautiful mackerel is brought in from Norway, where the icy waters are home to fish with flesh rich in essential Omega Fatty Acids. Its meat is very soft and tender with a strong flavor that is not for everyone; but those of us who like it LOVE it Many Sushi restaurants purchase their mackerel as packaged fillets pre-cured and vinegared, but Kaido Japanese Restaurant purchases only whole, flash-frozen mackerel that we clean and cure in-house. Served as nigiri-sushi or sashimi.
