Cabbage doesn’t have to be boring. This Thanksgiving, cabbage gratin is here to show up the green beans and potatoes. (It’s vegetarian friendly, too!) You will need: 1 medium head of green cabbage, cut into 8 wedges 2 Tbsp olive oil... Salt and black pepper to taste 1 large yellow onion, quartered 6 cloves of garlic 2 cups heavy cream 1 Tbsp fresh thyme and sage, minced 4 oz Joseph Farms Part Skim Mozzarella Cheese, grated Directions: 1. Preheat oven to 350. Oil up the cabbage wedges and place on a rimmed baking sheet. Lightly season with salt and pepper. Roast for 40 minutes or until edges are lightly browned. 2. In a saucepan combine onion, garlic, cream, herbs, salt and pepper. Bring to a light simmer and let go for 20 minutes stirring occasionally until onions are soft. Transfer to a blender and blend until smooth. 3. Butter up a shallow 3-qt baking dish. Arrange cabbage in dish so wedges are lying on a cut side and cover in cream mixture. Bake uncovered for 30 minutes or until cream thickens. Let cool. 4. Sprinkle cheese all over the top and broil until brown and bubbly, about 4 minutes.

There's a lot to be thankful for with this cheesy pull-apart party loaf! Here's what you'll need: 1 unsliced round loaf of sourdough... 1 lb Joseph Farms Part Skim Mozzarella Cheese, shredded 1/2 cup butter, melted 1/2 cup of parsley, basil, or oregano (or all 3) Directions: 1. Preheat oven to 350. Cut bread width-wise into 1-in. slices to within 1/2 in. of bottom of loaf. Repeat cuts in opposite direction. Sprinkle and distribute cheese within the cuts and crevaces of the bread. 2. In a small bowl, mix butter and herbs; drizzle over bread. Wrap in foil; place on a baking sheet. Bake 15 minutes. Unwrap; bake until cheese is melted, about 10 minutes longer. Enjoy!

Fall = football, so get in the game with our easy cheesy Buffalo dip! You will need: 3 cups cooked chicken, diced or shredded 2 8oz packages of Joseph Farms Cream Cheese... 1 cups Joseph Farms Mild Cheddar Cheese, shredded cup buffalo wing sauce green onion, finely chopped cup blue cheese crumbles (optional) Directions: Mix all ingredients together and spoon into a baking dish. Bake at 350 degrees for 20-30 minutes or until hot and bubbly. Serve with corn chips or sourdough rounds! Can be made one day in advance and refrigerated before baking.

Let your spooky spirit pop at your next party with these adorable Mummy Halloweeño Poppers! You will need: 1 package (8oz) Joseph Farms Cream Cheese, softened 1 cup Joseph Farms Monterey Jack Cheese, shredded... 10 jalapeños, halved and seeded 1 green onion chopped package of canned refrigerated crescent rolls Candy googly eyes (or you can draw eyes on with ketchup or mustard) Instructions: 1. Preheat your oven to 400F. In a small bowl, combine the cream cheese, shredded cheese, and green onion. Using a tablespoon, fill each pepper with the cream cheese mixture, packing tightly. 2. Next, unroll the crescent rolls so you have 2 rectangles, a total of 4 triangles. With your fingers, gently seal the perforated seam. Take a rolling pin and roll each rectangle out. Then, with a pizza cutter, cut the dough into 10 long thin strips. 3. Carefully stretch out the piece of dough, and wrap around the pepper leaving an opening for eyes. Continue to do this for all peppers. Place poppers on baking sheet and bake for approximately 10-12 minutes, or until the tops are golden brown. Place candied eyes in the opening and serve immediately!

How you choose to celebrate today is your pierogi-tive, but we like to keep it cheesy for National Pierogi Day! For the wrappers, you will need: 2 large eggs 1/4 cup water... 1/2 teaspoon salt 2 cups all-purpose flour Filling: 1 large egg 1 teaspoon salt 1 teaspoon sugar Dash pepper lb Joseph Farms Marbled Cheddar Cheese, grated lb boiled potatoes, mashed 4 tablespoons butter, divided Sour cream and bacon bits, optional Directions: 1. In a large bowl, whisk eggs, water and salt until blended; gradually stir in flour. Transfer to a lightly floured surface; knead 10-12 times, forming a firm dough. Cover with plastic wrap and let rest 10 minutes. 2. For filling, in a small bowl, whisk egg, salt, sugar and pepper. Stir in cheese and potatoes. 3. Divide dough into 4 portions. On a lightly floured surface, roll each portion to 1/8-in. thickness; cut with a floured 4-in. round cookie cutter. Place 1 tablespoon filling in center of each circle. Moisten edges with water; fold in half and press edges to seal. Repeat with remaining dough and filling. 4. In a large stock pot boil pierogi in batches; reduce heat to a gentle simmer. Cook until pierogi float to the top and are tender and remove. 5. In a large skillet, heat 1 tablespoon butter over medium-high heat. Add pierogi in batches; cook until golden brown, 1-3 minutes on each side, adding additional butter as necessary. If desired, top with bacon bits and serve with sour cream. Enjoy!

Happy World Vegetarian Day! This veggie pizza is great for a weeknight dinner that’s not only tasty, but super easy! All Joseph Farms cheese is vegetarian, making it the best choice for all your vegetarian dishes. You will need: 1 can (13.8 oz) refrigerated pizza crust 8 oz homemade or canned pizza sauce.... 1 cup Joseph Farms Mozzarella Cheese, shredded (4 oz by weight). cup cherry, plum, or heirloom tomatoes, sliced very thinly cup zucchini squash, sliced into thin coins cup sliced pitted black olives tsp fresh rosemary, coarsely chopped Directions 1. Heat oven to 425F. Unroll dough onto a pizza stone. Starting at center, press dough into 12-inch circle, forming 1/2-inch rim. 2. Spread pizza sauce over crust to within 1/2 inch of edges. Distribute half of the mozzarella on top. Arrange vegetables as desired and sprinkle the rosemary overtop. Top with remaining mozzarella cheese. 3. Bake classic crust 14 to 18 minutes, thin crust 8 to 12 minutes, or until crust is golden brown. Cut into 8 slices, or have some fun and cut into squares for bigger parties.

Tomorrow is National Better Breakfast Day, so make it better with cheddar! Egg and broccoli cheese cups are not only easy, but a great breakfast to enjoy on the go. You will need: 8 large eggs... 1 cup chopped steamed broccoli 1/2 teaspoon salt 1/2 cup cherry tomatoes, halved or quartered 2 cups (8 ounces) Joseph Farms Mild Cheddar Cheese, shredded Freshly ground pepper to taste 1/2 cup heavy cream Olive oil for greasing mini-muffin pans or baking dish Directions: Preheat oven to 350F. Break eggs into large bowl and whisk until slightly foamy. Drop in the tomatoes, broccoli, salt, pepper, cheese, and heavy cream. Mix well. Pour the egg mixture into the well-greased muffin pans and bake for 30 minutes, or until tops are light golden brown and firm. If making one large frittata, bake for about 50 minutes, or until firm. Serve and enjoy!

Happy New Year’s Cheese from our family to yours! Tonight, as you and your loved ones celebrate, watch the ball drop with a ball of your own a cheese ball that is. You will need: 2 cups Joseph Farms Sharp Cheddar Cheese, shredded 1 8oz package Joseph Farms Cream Cheese, softened... 1 tsp onion powder tsp table salt tsp black pepper cup finely chopped walnuts or pecans cup minced chive cup coarsely chopped dried cranberries Directions: 1. Mix cheddar, cream cheese, onion powder, and salt & pepper until combined and smooth. 2. Wrap in plastic wrap and form into a ball. Refrigerate at least 1 hour and up to 24 hours. 3. In a large bowl, toss together nuts, chives, and cranberries 4. Roll ball in the cranberry nut mixture until well coated. 5. Place on a serving tray and refrigerate. Set out at least a half-hour before serving. Happy New Year!

Happy Holidays from our family to yours. Here at Joseph Farms, the holiday season means it’s time again for our 12 Days of Cheese! On this 1st Day of Cheese, we’re flashing back to last year’s festive cheese wreath. Here’s what you’ll need: 2 1oz packages fresh rosemary 1 1lb chunk Joseph Farms Monterey Jack Cheese, cubed... 1 1lb chunk Joseph farms Sharp Cheddar Cheese, cubed Red and green grapes (about ten of each color, more if desired. Other fruits and berries optional) Directions: 1. Arrange rosemary sprigs around edge of a serving tray or plate. (If desired, use a 10-inch round of parchment as a guide to help keep shape) 2. Remove the parchment, careful not to disturb the rosemary placement. 3. Top rosemary with cheese cubes and grapes to resemble photo.

We wish you a happy Cookie Day! With the holidays around the corner, warm flavors are in order. These ginger-cinnamon sandwich cookies with cream cheese filling are sure to fill you with holiday cheer. For the Cookies: cup butter, cold cup granulated sugar... cup brown sugar tsp salt tsp baking soda 2 tsp ground cinnamon 1 tsp ground ginger 1 tsp vanilla extract 1 egg 1 cup all-purpose flour For the Filling: 1 (8 oz.) package Joseph Farms Cream Cheese, softened at room temperature 1 cup powdered sugar, sifted 6 tablespoons butter or margarine, softened 1 teaspoon vanilla extract Directions: 1. Mix all cookie ingredients until a dough informed. Chill for at least an hour. Drop cookie dough onto a lined baking sheet and bake in a 350 degree oven for 15-20 minutes or until cookies are fully baked. Take out of the oven and let cool completely. 2. Cream the filling ingredients together. Pipe or spoon filling onto the underside of one cookie. Top with another cookie. Enjoy!

Looking for something easy but impressive to make for the Thanksgiving cocktail hour? This cheesy spinach roll is the way to go. You will need: 1 sheet puff pastry, thawed 1 8 oz package Joseph Farms Cream Cheese, softened... cup fresh spinach, cooked and drained of excess water, or frozen and thawed 1 cup Joseph Farms Mozzarella Cheese, shredded 2 teaspoons garlic powder 1 teaspoon salt 1 teaspoon pepper teaspoon red pepper flakes 1 egg, beaten 1 tsp Italian seasoning Directions: 1. Preheat oven to 375F In a large bowl, combine cream cheese, spinach, mozzarella, garlic powder, salt, pepper, and red pepper flakes. 2. Place puff pastry on a parchment paper-lined baking tray. Spread spinach cheese mixture and roll into a log. 3. Create 6 8 cuts about 1/3 of the way deep all along the log. Carefully curve the cut log into a circle, tucking the ends into each other. 4. Brush with beaten egg. Sprinkle Italian seasoning all over the top. Bake for 30 minutes or until golden. Enjoy!
