Our Dinner at Izakaya by Slowfish An izakaya is a Japanese pub, where people come for sake and food to go with it. Shortly before our dinner at Izakaya By Slo...wfish in West Hollywood a few days ago, my friend Gerry Furth-sides reminded me of a Japanese saying, "every good story starts with sake." As soon as we saw the bao (Chinese steamed bun) filled with short ribs, we knew that this restaurant is different. The bun’s color was a striking bright purple because it was made with ube, the Filipino purple yam. I’m Filipino, said Chef Kennen Navarro, and so I love to add ube. Most of his dishes, he said, are in the style of Japanese pub food, that’s very California. Chef Navarro enjoys experimenting. He flavored a dessert with miso because he likes playing with sweet and salty. His short ribs were similar to Korean kalbi but he added butter because he likes the way that French chefs finish dishes with butter. Yakir and I appreciated chef Ken Navarro’s culinary knowledge and creativity and enjoyed tasting his delicious cooking. Our menu: * Fried brussels sprouts leaves with togarashi (a Japanese red chili spice blend) and furikake (a Japanese sesame, dried fish and seaweed blend) * Garlic shishito peppers - Fried Japanese shishito peppers drizzled with black garlic sauce and topped with bonito flakes * Short rib bao with an ube bun, pulled short ribs and baby lettuces * Sashimi platter with a variety of fish, some plain and some seasoned with ponzu, served with pickled ginger and fresh wasabi * Tonkatsu - fried marinated pork cutlet with spicy purple cabbage coleslaw and Japanese BBQ sauce * What the Heck sushi roll - spicy tuna with avocado flavored with cajun seasoning salt topped with a seared tuna, then with a pile of crisp fried onions and served with eel sauce and mustard ponzu * Beef bone marrow with kakuni sauce (sweet miso sauce), pickled ginger and caviar * Tonkatsu ramen - the noodles were in a spicy twelve-hour broth flavored with miso, with a marinated egg, Japanese chasu pork and mushrooms, finished with blackened garlic oil Desserts: * Mango ice cream cake made with whipped cream and condensed milk and topped with peanuts * Red miso creme brulee with edible flower * Flan, Filipino style - made with condensed and evaporated milk and egg yolks, with lemon zest steeped in the mixture We drank sparkling sake, and Japanese red wine as well, but this izakaya is definitely a place where many people would come mainly for the food.
