Do we need to know what a carbohydrate is, what different types of sugars are and what the metabolism of these compounds in the body is? Oh yes! Carbohydrates as the name implies, are molecules made of carbon and hydrogen. Glucose which is the simplest form of carbohydrates in the body is essential for metabolism, our liver makes it, and it’s the primary fuel for the brain. And it’s present in almost all living organism. So glucose per se is not a bad thing, just like endo...rphins which are natural morphines in our brain to help us relax and cope with stress and pain. But what happens if we start using morphin, we become addicted. Same goes which sugar. Other simple sugars are galactose and fructose (which is the main addictive substance in America) it’s not marijuana; it’s not crack cocaine or heroin. It’s fructose. Carbohydrate addiction is only second to nicotine in terms of cost on society, mortality and morbidity associated with it. Again, higher than alcohol or any drugs. Of course a mild consumption of sugar that exists in fruits or honey is ok, because plants are essential for a healthy diet. But when we concentrate sugar, like high fructose corn syrup and other high sugar concentrates, and add it to our food and drinks, we are sure to harm our bodies, even if we don’t develop diabetes type two. Complex carbohydrates are polymer of simple sugars. Starch is the most consumed one and is present in grains, and many other plant sources. If we consume plants or even grains whole, we receive a healthy mixture of bran, cellulose, fiber and starch, but when we concentrate starch in the flour we use, in white bread, pasta, tortillas then we are exposing ourselves to an unhealthy dose of carbohydrates that can cause diabetes type two over time.

Q: Is eliminating all carbs from our diet ok? A: First of all it’s impossible. Fruits and vegetables that are essential for us all have carbohydrates in them. Even meat has some glycogen in it which is a form of starch. What we need to know first is the different types of carbohydrates. We have Starch, fiber and sugars. Fibers or good carbs are essential for a healthy eating habit. They lower our blood fat, improve our digestive system and lower the chance of certain malign...ancies. They can be found in plants. Sugars we don’t really need, but we will receive some sugars from the fruit we eat, vegetables or even dairy products. The important thing is not to add any processed sugar to our food. Don’t consume foods that have fructose syrup added to them, etc Starch has been the major calorie source for humans since the agricultural revolution, some 10,000 years ago. But in reality, we really don’t need any starch. Of course, it’s so deeply mixed with our cultures that it’s difficult to imagine living without it. Imagine Italian food without pasta, or Mexican food without tortillas or Persian and Asian food without rice. So, instead of eliminating them, I like to try and limit them; and, again, back to our main discussion, this needs to be decided on the individually based circumstances. Someone who’s in perfect shape and ideal weight and exercises 2 hours a day, they need some starch to maintain the calorie they need. Diabetes type two Diabetes type two affects almost 30 million Americans which is ten percent of the population. This type of diabetes, type two that is, is hallmarked by insulin excess and insulin resistance, completely opposite to type one. Even though our understanding of the processes leading to diabetes type two has dramatically changed in the past 2-3 decades, we are still treating the aliment the way we used to before. Medications in general, although important and ne...cessary, should not be considered the first line of therapy in diabetes type two as this ailment is not deficiency in insulin, but addiction to carbohydrates. We have to change the way we think about diabetes type two in order to be successful treating it. Diabetes type two is not deficiency in insulin and giving insulin stimulants or worse off, insulin injections may correct the sugar levels temporarily, but feeds the vicious cycle of gaining weight, metabolic disturbance and more insulin resistance, requiring more and more medication. Diabetes type two is carbohydrate dependency and addiction and unless we view this ailment the way it really is, we won’t achieve long term remedy for it. See more

Diabetes type two - Treatment Challenges Although today we know that the problem is not insulin deficiency, but insulin excess and insulin resistance, the standard treatment for diabetes still is insulin injections and insulin promoting pills. You must watch what you eat even if you are not overweight! I’m sure you know people who suffered a heart attack even though they were not over weight. If they had watched what they eat, they could have prevented, or delayed this from happening. There are certain things we take into account when we are analyzing and counseling people on their eating habits. Q: With so many different diet systems out there, how can I tell which one is the best? A: The Idea of adopting a universal set of rules called a diet is flawed to me. There are so many variables in play that make it impossible to come up with a universal diet that benefits everyone.
