Salads are easy for meals on-the-go and a great way to add more veggies into your life! Although salads can be healthy, it's easy to go overboard on calories with creamy dressings. Control how much dressing you use by trying salad spritzers. This recipe features a ranch salad spritzer and it has less than 2 calories per spray! Southwestern Chicken Salad with Corn Ingredients (makes 1 serving):... Chicken breast, 2 oz. Romaine lettuce, shredded, 1 cup Cheddar cheese, low fat, 1 tbsp. Ranch salad spritzer, 1/2 tsp. (10 sprays) Frozen yellow sweet corn, thawed and drained, 1/2 cup Canned black bean, 1 tbsp. Salsa verde, 1 tsp. Lime juice, to taste Cilantro and onion, chopped, to taste Preparation: For salad: 1. Shred chicken breast into chunks and add to lettuce. 2. Sprinkle cheese on top and spray 10 sprays of Ranch dressing. 3. Toss and mix well. For corn and black bean: 1. Combine yellow corn, black bean and salsa verde. 2. Add lime juice, onion and cilantro to taste. Nutrition: Salad with corn and black bean contains 277 calories, 7.2g fat (2.9g saturated fat, 1.3g monounsaturated fat, 0.9g polyunsaturated fat), 5.8g fiber, 3.3g sugar, 25.1 protein, 357mg sodium.

Not only are grapes good for you but they also add a pop of sweetness in this savory salad. Ingredients (makes 6 servings): 3 cups cooked chicken breast, cubed 1 1/2 cups red or green grapes, sliced... 1/2 cup celery, thinly sliced 1 tbsp scallions, sliced 1/2 cup red bell pepper, diced 3/4 cup low fat mayonnaise 1 tbsp orange juice 1 tsp curry powder ground pepper to taste Preparation: 1. Combine first 5 ingredients in a bowl. 2. To make the dressing, combine remaining ingredients in another bowl and stir to mix. 3. Add dressing to the salad, toss, and serve cold. Poaching is a healthy way to cook boneless, skinless chicken breasts because you don't need to add any oil! Begin by placing boneless, skinless chicken breasts in a skillet or saucepan. Add lightly salted water (or chicken broth) to cover and bring to a boil. Cover, reduce heat to low, and simmer gently until the chicken is cooked through and no longer pink in the middle (10-15 minutes). Ingredients (makes 4 servings): 1/3 cup low-fat mayonnaise 1/3 cup nonfat or low-fat plain yogurt... 2 tsp lemon juice 1/4 tsp salt 3 cups chopped cooked chicken breast 1 medium red apple, diced 1 cup halved red or green grapes 1 cup sliced celery 1/2 cup chopped walnuts, divided (toasted if desired) Preparation: 1. Whisk mayonnaise, yogurt, lemon juice and salt in a large bowl. 2. Add to the bowl chicken, apple, grapes, celery and half of the walnuts. 3. Serve topped with the remaining walnuts.
