These are super yummy and relatively healthy, a perfect treat for a sweet tooth. Peanut Butter Muffins By Debbie Shepard... 2 Cups of Peanut Butter (I use Creamy Skippy) 2 ripe bananas, mashed 1 Cup of Honey 2 eggs 2 tsp vanilla 1 tsp baking soda 2 Tbls coconut flour (any flour would work) DIRECTIONS: Pre Heat Oven to 325 convection bake. Coat muffin tin with non stick spray. Blend the ingredients well; I use a fork but you can use a mixer. Mix until everything is blended well. Take a cup to scoop batter into your muffin tins. They will be full. Bake for 18 minutes. The middle will sink a bit once cooled but we prefer them to be doughy, similar to a molten type cake. If you want them less doughy bake for 22 minutes.

I made this last night and it's a family favorite. It's a great comfort food! ENJOY!!! Shepherd’s Pie (Shepard’s Pie) By: Debbie Shepard... Pre Heat over to 375 degrees F INGREDIENTS: 2 Tbls. Extra virgin olive oil 3 Tbls. Unsalted butter 1 Medium onion 1 Cup sliced carrots 2 ribs of celery, sliced Cup frozen white corn Cup frozen peas 4 garlic cloves, minced 1 Tbls. Kosher Salt 1 tsp. dried oregano 6 Tbls. Tomato paste 2 pounds of ground beef 1/3 Cup of beef broth 1 tsp. Worcestershire sauce 1/3 Cup Red Wine Freshly ground pepper (to taste) 2 pounds of Mashed potatoes cup grated Parmesan cheese DIRECTIONS: Heat the olive oil and butter in a large skillet over medium heat. Add the onion, carrots, celery, garlic, peas, corn, salt and oregano. Cook until vegetables are tender, about 8 minutes. Stir in tomato paste until it turns brick red. Add the broth and red wine, simmer for about 5 minutes. Stir in beef and Worcestershire along with some pepper. Break up any clumps of meat, cook until the meat is cook through, about 5 minutes. Transfer the meat and vegetable mix to a 9x11 casserole dish. Spread mashed potatoes over the top, sprinkle with cheese. Bake until juices are bubbling and potatoes are slightly browned, about 40 minutes. MASHED POTATOES: 2 pounds of russet potatoes Sea salt pepper cup butter cup of milk Peel and cube potatoes. Put into a saucepan with some salt. Bring to a simmer over medium-high heat, uncovered, until potatoes are tender but not mushy, about 15 minutes. Remove from heat, drain water and return potatoes to sauce pan. Add butter in slices to allow the butter to melt in different areas. Start mashing, add milk and salt and pepper to taste. For creamier potatoes beat potatoes with an electric mixer.

Here is my real estate advice for people wanting to move to a specific area where the affordable houses tend to need work. Loomis is a great example of this. Find the neighborhood first! You can always change a house. Second, preferably find a house that has the square footage you need and/or prefer. This will save you money in the long run. Remodeling is about half the cost per square foot than a new build. Even if you decide to tear most of it down, you will save thous...ands of dollars in permit costs alone simply by keeping an existing wall. Find a realtor who is capable of having a vision outside the existing walls, like ME. They can help guide you and see potential that some people just don’t have the ability to see. I say this not only because I am a realtor but because I know personally what it’s like to move from a beautiful home into a great town but a home in most people’s eyes that was a disaster. Pumpkin Streusel Bread/Muffins Shared by: Debbie Shepard ***Pre heat oven to 325 Convection Bake*** Blend:... 1 sticks of Butter (3/4 cup) 3 Tbls. Molasses 2 Cups of Sugar 4 eggs 2/3 Cup of Water or Orange Juice 2 Cups of Pumpkin 3 1/3 Cup Flour Tsp. Baking Powder 2 Tsp. Baking Soda 1 Tsp. Salt 1 Tsp. Cinnamon 1 Tsp. Cloves Mix until all ingredients are blended well together. Streusel Topping: Cup chopped pecans 4 Tbls. Sugar 3 Tbls. Butter, cut into small pieces Tsp. Cinnamon Mix in a bowl to sprinkle on top. Pour dough into pan and sprinkle topping evenly. For Standard size muffins, Bake for 18 minutes For a loaf of bread, Bake for about an hour See more

I haven’t posted on this page in a while but since I’ve been getting requests for recipes I thought I would start with this one. I don’t buy taco seasoning packets. It’s so easy to make, it doesn’t have a preservative taste and it allows me to go through my spices so they never get old. I sprinkle a generous amount over my ground turkey/meat. Once it’s cooked, I use salsa instead of water for a liquid and to make a little sauce. If you don’t want added flavor, you can always use a can of petite diced tomatoes. There you go.... just in time for Taco Tuesday!!!

It's the season for baking. I made pumpkin bars for the DO football breakfast this morning. I had a few people ask me for the recipe so I thought I would shar...e it with every one in case you're looking for a super easy and yummy pumpkin treat. Happy Baking!!!! ~PUMPKIN BARS~ Preheat oven to 350 (325 convection bake) Bars: 16oz can of pumpkin 2 cups of sugar 1 cup of oil ( I use cup of apple sauce and cup of oil) 4 eggs 2 cups of flour 1 tsp baking soda 1 tsp baking powder tsp salt 2 tsp cinnamon Mix all the ingredients together and pour into a greased 10x15 cookie sheet with 1 inch side. Bake for 20 minutes. ~ICING~ 1 pkg of 8 oz cream cheese 4 Tbls. Butter 1 cups of powered sugar 1 tsp vanilla Mix together and spread over cooled pumpkin. Slice into bars.
