One of the advantages of having our own lab is that in harvest years as crazy as this one ( 2020 ), we can take a small batch of grapes ( the rest of which are still on the vine ) and ferment a very small amount, essentially creating a tiny batch of wine in order to see if the rest of the grapes are ready to be picked or have been affected by things like smoke from fires.
