Antinutrients? Are they bad? Should you avoid them all? Well... Let's start off with what #antinutrients are: They are groups of plant compounds that reduce our bodies ability to absorb nutrients, AND they have side effects ... A food like spinach, which contains calcium, also contains #oxalate . The oxalate does NOT allow your body to absorb the calcium This is why it is recommended to eat spinach slightly cooked vs raw as the cooking process breaks down up to 50% off the oxalate (Raw spinach in high amount can also contribute to Kidney stones) LECTINS (gluten is a type of lectin) are thought to play a big role in leaky gut and autoimmune disease. Lectins are carbohydrate binding proteins which are widely distributed in nature and are found in a whole variety of commonly consumed foods. There are several different types of lectins.
