Another quiet and beautiful night. A dumplings and beer night. People come, people eat, people drink, and smile. They smile to each other, they say hi to us when we serve, they enjoy the moment, they stop by our window saying bye to us before they go. They cheer to us for the good food, we cheer to them for being so awsome and kind. We say goodnight. We are tired, and we are happy and satisfied. We gather so much memories with our customers and plan to use those as the soi...l to grow more beautiful things tomorrow. We are healed. We are better. . . Dumpling is inclusive type of food. It’s a food of comfort, it’s a food of adaptation through geo and time , it’s a food to carry nostalgia, innovation, and messages. That’s why dumplings often made by immigrant. When I was kid, my grandparents use dumplings to tell the story of their childhood which was in a far away place with completely different produce, and they made more new type of dumplings for us by incorporating the ingredient fresh in Taiwan, those dumplings became... a staple for my childhood. . . There are so many type of dumplings in this world - However, there is always one thing in common dumplings always bring people together because this is the food to share, to provide comfort , joyfulness, and celebration. through the sharing, this magical food create more understanding between people, a bridge is formed from here, more conversation and more creativity that embrace different culture elements starts here. And we simply feel, the world is better this way - when we can embrace and appreciate each other’s differences, and something will be built together to push things forward . . . I really love our new pocket dumplings. . Dumpling is all about to balance the fillings and wrap. The way we fold, how thick the filling and wrap ratio should be , and how we cook it to create the right texture, what’s the first bite taste like, and what’s the after taste all the perspective needs to be carefully considered. . This new pocket dumplings - the wrap create a kind of crispy ness that will bring out more flavors for all the herb we use, which I feel very excite...d about. . . Cheers to all who never give up! . What does it feel like to run a hand-craft food business during pandemic? it’s hard. Period. . .... This is us the elite small team at our commercial kitchen - we make dumplings and create all the food during weekday everyday from early morning. And Today, we had a long working day , 8 am to 7pm. and in fact, we had long day yesterday too because we have one team member got cold (yes just cold) and we really have to keep everyone safe. The reality is one less person meaning long hours , and we have to wear mask all day with less fresh air . What keep motivating us is the support we have toward each other, is the obsession of making perfect food, is the proud of achieving our commitment without any compromise, and the most important motivation is the wish that through these food , we will make our customer happy and nourished . We wish to create more beautiful smile and energy for this world through our own hands. . . I really feel very grateful that I got chance to work with these team members who share the same value with me. Sometimes with long hours it’s not easy for everyone. I love the energy and the craftsmanship spirit we got to share with each other . the magic we create together though food for customers and for each other is exactly the reason why we love food business. . . As we finished this long working week, I personally want to thanks to our devoted production team, special shout out to Teshua and Von for hanging there with me this week with long hours to create all the beautiful food here. . . I always believe, beautiful journey worth everything no matter what’s the result. And people is the reason why a journey can be beautiful. . . Weekend food service starts tomorrow! SHISO, STAR ANISE, DRIED CHILI AND .... LOVEEEEE . THIS IS HOW WE MAKE OUR PICKLED PEANUT ... We use the shiso from @radicalfamilyfarms love incorporating the produce from them - knowing the care they put in their farm, I always want to make sure the ingredient shines.
