Cooking with Gerard www.gerardspaella.com RECIPES - Session #3 DRINKS and PINTXOS... May 27th, 2020 DRINKS White Port and Tonic A Classic Portugues Apéritif Pack a tall glass with ice Measure out: 2 ounces of white port add tonic water to the brim add juice from half a lemon Garnish with a lemon slice Kalimoxto Spain’s Iconic, International Drink (from the 70’s) Pack a glass with ice Add: a few drops of bitters fill half way with red wine finish off with cola Garnish with an orange slice PINTXOS Marinated Olives Perfect for a Party 2 quarts assorted olives 1 cup virgin olive oil One orange cut into quarters One lemon cut into quarters Lightly toast the following: One tablespoon of fresh thyme leaves One bunch of rosemary 1 teaspoon of each fennel seed, red chili flakes, dried oregano. 1/4 teaspoon mustard seed One bay leaf Mix well and store in a glass container for display Spiced Almonds A Tasty Treat Spiced almonds 4 teaspoons olive oil 1 1/4 teaspoons smoked or hot paprika 1 teaspoon ground cumin 2 cups blanched whole almonds 1/2 teaspoon coarse sea salt Preheat oven to 350F Warm the oil in a small sauce pan over low heat and add paprika and cumin. Stirring to mix and remove from heat will make sure begins to bubble. Transfer to a medium bowl and stir in the almonds then place on parchment paper paper lined baking sheet and bake for 10 minutes. Sprinkle right away with coarse salt and move to a wire rack let dry for at least two hours before serving.

This week’s recipe:... Fedeua paella for 2- 4 ~Gerard Nebesky 4oz fedeua or vermicelli pasta 1.5 cups seafood stock (store bought is fine) Olive oil 3 garlic cloves crushed skin on Half med onion diced Salt/pepper/saffron/smoked paprika 2-4 large scallops 4-6 gulf shrimp peeled tail on 2-3 small squid cut into rings and tentacles Half bell pepper diced 1/2 cup Diced tomato (canned) 1/2 cup peas 2 Lemons Parsley Aioli One 12 inch paella pan or flat frying pan We will be using stovetop and oven to finish.
