A little Peri Peri Chicken and Portuguese sweet bread today in CAII. It was a good productive day, I love these long classes!
So much has been going on since February that I forget to post! Check out all of the fun stuff my students have been doing. 6 more weeks of cooking with this group!

Competition season is upon us and it’s so different this year. For ProStart, instead of a team working together, each student is on their own. There are a few categories to choose from. My students gravitated to the cupcake comp and taco comp. included in their submission they have to do a video talking about what they made. I’m so proud of them for sticking with it and so happy that they made me such a tasty lunch today. This competition year is not nearly as fun as the traveling and being in the moment with all of the other schools but we’re hanging in there. Wish us luck!
Bringing a week of demos and DL to a close. So happy to get them all back on Monday. Next week we’ll be doing a ton of day treats!
CAIII had tons of fun this week making chocolate mousse, Creme anglaise, ice cream...and sabayon (not pictured). Mousse/custard week was very sweet and filling!

We tried something new today. I met with students on zoom and did a cooking demo. They requested Chicken Cordon Bleu earlier in the week and so that’s what we made. I did a super simple recipe with them and now they'll be making versions of it at home. It was so good to see them and cook with them! We'll probably be adding more of these in each week. It gives us all something to look forward to!
Our class is working hard to raise money for our last 2 class trips! One trip is in March for our competition and the other is in May for our annual foodie trip...this year we're headed to Chicago.SO, to raise money, my students are selling a few sweet treats for Valentine's Day. We are selling: Macarons, Red Velvet Cupcakes, Chocolate Cupcakes, Decorated Heart Sugar Cookies and Chocolate Dipped Strawberries. If you are interested, message me! We will get them to you on 2/14.
