Fermentation Farm 20.01.2021

When you're working with almost 300 lbs of organic green cabbage, it starts taking over the kitchen! Have you ever wondered why cabbage is used so often in fermentation? Cabbage is a hearty, cold-weather vegetable that is harvested late in the season which helps to facilitate a slow fermentation process for long-term storage, especially during winter months. Even Captain Cook took a store of sauerkraut on his sea voyages to help prevent scurvy! To get the process started, the... lactic acid bacteria that are responsible for the fermentation process are naturally found on cabbage. These bacteria produce lactic acid which is effective in inhibiting the growth of other bacteria that may decompose or spoil the food, and they consistently dominate in the submerged environment. Always keep your cabbage submerged during the fermentation process! On top of being the ideal vessel for fermentation, cabbage is a high source of vitamins C and K, and the fermentation process increases the bioavailability of nutrients rendering sauerkraut or kimchi even more nutritious than the original cabbage! As our friend Sandor Ellix Katz would say, "Given the constant assault on our intestinal bacteria by antibacterial chemicals, we need the replenishment of lactic acid bacteria populations" to restore our gut health!

Our 18 taps of fizzy deliciousness are up and running! This includes 10 Kombuchas, 4 Juns, 3 Fermented Sodas, and 1 Nitro Cold Brew Coffee. Our goal is to always have your favorite flavor on tap now! We often get asked what the best way is to get started drinking these fun, probiotic beverages, especially from customers who don't currently consume any probiotic foods or drinks. For newbies, we recommend easing into these drinks, starting with 6 ounces, or about half of our 12-ounce bottle and then waiting to see how you feel. We have customers who could drink a whole growler in a couple days and others who like small servings throughout the week. Everyone is different so make sure to listen to your body while enjoying these fizzy, gut-healthy drinks!

What makes our Kraut Grilled Cheese so special, you ask? Well, let us break that down for you: We use Blue Skies Bakery long-fermented, small-batch organic sourdough bread The 72 hours of cold fermentation and cold proofing techniques bring out a complexity of flavor from the rye and wheat flours while making the bread much more digestible. The natural enzymes in the flour further aid in the digestion process by helping break down the gluten and phytic acid which increase...s the bioavailability of nutrients and ultimately creates a healthier bread. We use RAW FARM by Organic Pastures truly raw cheddar Their raw cheddar is made with whole raw milk from cows that grass-graze daily which packs their cheese with bioavailable vitamins, minerals, enzymes, beneficial bacteria, naturally occurring CLA and Omega-3 fatty acids. This truly raw cheddar is never heated above 102 F. Heating above this temperature denatures proteins, enzymes, and kills beneficial bacteria that aids in the digestion of dairy. You get to pick from any of our organic, probiotic-rich sauerkrauts Research has shown that sauerkraut contains an abundantly diverse population of microorganisms including 28 different strains of bacteria! Typical probiotic pills may only contain a handful of specific strains and some of them may not even survive through the stomach... Oh and I almost forgot to mention that it tastes AMAZING!!

Our fermented Ginger Soda, Vanilla Soda, and Root Beer all use what is called a ginger bug to start the fermentation process. The ginger bug is a starter that utilizes the yeasts and bacteria naturally found on organic ginger, and is made up of water, sugar, and sliced ginger. When you combine these 3 ingredients together in the right ratio, you get an active, probiotic fermentation within a couple of days. Once the ginger bug is active and bubbly you can use it to make tons of ginger-based drinks!

RECIPE ALERT! Here's a simple and delicious Cheesy Quinoa recipe using ingredients that we sell here at the shop! Ingredients: 1 cup To Your Health Sprouted Flour Co. Organic Quinoa 2 cups FF Bone Broth (chicken or beef) or FF Veggie Broth... 1 cup shredded Spring Hill Organic Mozzarella Cheese In a heavy saucepan, bring broth to a boil. Stir in 1 cup sprouted quinoa. Return to a boil, cover and reduce to low. Simmer on low heat for 15 minutes. Remove from heat and allow to sit covered for 5 minutes. Add 1 cup shredded mozzarella cheese and stir until the cheese is completely melted. Serve immediately and enjoy!
