Lunch time! Another loaded salad wth mixed greens lots of olives and cherry tomatoes and of course avocado . For a little crunch add your favorite seeds, I added some sunflowerseeds this time. Some homemade falafel and quinoa to make this a protein rich complete lunch. I did dress my mixed green in a generous amount of olive oil and some lemon juice as well.... Falafel are a great source of not only carbs and fiber but protein as well! Dont forget your olives, avocado and seeds for those heart healthy unsaturated fats. . Made a vegan version of fajitas. . I know it's technically taco Tuesday but I wanted something more filling. . I've got my balanced plate with carbs, protein and fat (avocado not pictured ).... I like to heavily season my tofu, not just for flavor but also all the benefits thay accompany using herbs and spices. Herbs and spices contain many different phytonutrients that have antioxidant and antiinflammatory properties. . So next time, set aside the salt and experiment with some herbs and spices to experience maximum flavor. . . Loaded Lunch Bowl . I have to say, I haven't been keeping to a 100% vegan diet these days, but thats not to say I don't try to eat what's best for my body. Now realistically, I'm not always going to want to eat 100% clean and thats where the occasional treats and indulgences come in. Enjoying what you eat is just as important as what you eat. You shouldn't have to sacrifice one for the other. . Loaded salad bowl dressed with lemon and olive oil, topped with roasted carrots..., black beans, green peas, hemp seed and avocado and a serving of sunflower seeds to add a bit of crunch. I always make sure to build my plate with all macros and a variety of colors for micronutrients. . Fats - Olive oil, avocado, sunflower seeds . Protein - Black beans, Hemp seeds, though the other veggies have protein too, they're not a very dense form . Carbs - Black Beans, mixed greens, carrots . Fiber - Black beans, hemp seeds, carrots, lettuce, avocado (yes) . . Fats help your body absorb fat soluble vitamins like vit E, D and A as well as some of the minerals. Fibers help to keep you full longer, improve bowel movement regularity, control blood sugar and lower cholesterol! . .
