One of my biggest challenges was how to get that roasted pork to stand out. We marinated and slow roasted a pork shoulder and you can taste that juicy flavorful pork.

When I was a kid I’d crave cheesesteak sandwiches, the only place to get them nearby was a spot called Del Amo steakhouse. I was mesmerized by the line cook working the griddle.
