Oh, we know this syndrome well. We have early morning customers who when we run into them later in the day, we barely recognize them.

farm:table, just the facts All of our espresso drinks are made using a double basket (19 to 20 grams of grounds), pulling a ristretto shot (28 to 32 grams of espresso) we time our extractions to pull the shot in 25 to 28 seconds @ 190 degrees. It is the baristas responsibility to dial in the machine to produce these shots consistently. Our milk based drinks are as follows by size smallest to largest. Macchiato: only a "mark" of steamed milk on top of the espresso, this is se...rved in an espresso cup and is less than 2 oz (Sorry Starbucks, you just like the sound of the word) Tendernob: This is called a Gibraltar elsewhere in San Francisco (ask Blue Bottle) and a Cortado in the rest of the free world. About 3 oz in size Cappuccino: Ours are made very much like a Flat white as compare to a traditional foamy Italian Cappuccino. These are 7 to 8 ounces and our our best selling "for here" drink Latte: A twelve ounce cup of micro-foamed steamed milk and espresso, its our #1 "to go" coffee Mocha: We use San Francisco's own Tcho chocolate infused into our lattes

once we sell our guests their breakfasts, they are free to do as they wish. (this is why we don't deliver - we can't be caught in the middle of this!) : )
