The Facebook nudged me to do Persian food for purim and while I did the menu research and started selling stuff I was super nervous. I didn’t have fond memories as the last time I had Persian food was well before I taught myself to like cilantro so it likely all tasted like soap to me. Plus all the food sounded kind of gross. Fesenjan just didn’t sound good to me, but I went to the local market and stocked up on dried lime, sour cherries, fenugreek and pomegranate molasses. Then I tasted the #ghormehsabzi and my mind was blown. #eggplantfesenjan got my wife to eat eggplant and the aromatic rices really do go well with the herb intensive dishes. In my opinion this is one of the best soups I’ve ever made, which is ironic because I don’t like the texture of kabocha squash. However, the #vitamix works wonders to make this into a velvety texture like all of my other blended soups. This was saffron kabocha and quince soup with pomegranate seeds and roasted pistachios.
