Grilled Jidori chicken hearts. Unlike my guy Toshi, I do not butcher the heart into 3 separate parts. Why? Cause I haven’t tried to and will likely fail at it.

Saury (pike mackerel). Butterflied and deboned. Cured with salt and sugar for 20 min. Rinsed. Patted dry. Thrown in the fridge on a rack for a day. Before it hits the grill, it’s brushed with clarified butter. Finished with tare and maldon. Fish on a plate

The ill advised grilling in my fireplace series commences: Heritage pork chop dry cured over night. Simply grilled mid rare. White corn and poblano pepper. The poblano is charred, then the skin is removed as well as the seeds and ribs. Diced up to about the same size as the corn that’s shucked after grilling. Add to a pot with butter, pepper, soy, shio koji and brown rice vinegar. The jus is just a simple pork jus with a lot of fat. I am house husband ready y’all. @ Oxalis
