This recipe is way too good not to share...you’ll LOVE these! Especially if you’re a chocolate lover like me Chocolate Protein Cookies. You’re welcome 4.5 ounce chocolate chips 1 tablespoon coconut oil 1/4 cup coconut sugar ... 1 large egg Pinch of sea salt 2 tablespoons natural coco powder 1/4 teaspoon baking soda 1 scoop chocolate protein powder (I used a vegan one) 2 drops peppermint vitality essential oil (I used Young Living) Heat up chocolate chips and coconut oil until fully melted. Remove from heat and set aside. Combine the eggs and coconut sugar and beat with a handheld mixture until it thickens and increases in volume. Sift in the cocoa powder, baking soda, sea salt and protein powder. Gently whisk until combined. Fold in melted chocolate mixture. Add peppermint oil Chill the batter in the fridge for about 10 minutes. Scoop the batter onto parchment paper lined baking sheet. I did approximately 1-2 inch scoops and flattened out each scoop with a spoon gently. Bake at 350 for 8 to 10 minutes ENJOY!! Let me know what you think
