Here’s a great start to a cold fall morning from @onecrazedfoodie HAPPY MONDAY! Kick off the week on a high note with this bowl of energy! CARROT CAKE OATS 1 cup oats, 1.5 cups almond milk, 3 shredded baby carrots, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 2 chopped medjool dates, 1 tbsp maple syrup & a pinch of sea salt. All cooked on the stove and topped with another chopped date, mixed nuts, @harmlessharvest coconut yogurt and a drizzle of maple syrup. #MondayMotivation - Healthy Twix Cups!! Twix bars are always a favorite among kids and...well...everyone!! These Twix cups are a healthier take on the classic candy bar we all know and love, in mini bite form! They’re layered with an almond flour cookie crust, followed by a gooey date caramel center, and finished with a homemade chocolate topping! Vegan, gluten free, naturally sweetened and out of this world DELICIOUS Recipe from @wakeupandkale Happy Monday... ! Ingredients: Crust 1c almond flour 2tbsp Maple syrup 3tbsp Coconut oil Caramel 1c pitted California dates 1/4c creamy almond butter 1/2tsp vanilla extract 1-2tbsp warm water Chocolate topping 1/3c cocoa powder 3tbsp almond milk 2tbsp coconut oil 2tbsp maple syrup Method: Crust 1)Preheat oven to 350F & line a mini muffin pan with liners 2)Mix together all ingredients & press with hands into the bottom of each mould. Bake for 10mins & let cool 10mins before layering caramel Caramel 1)Soak dates in boiling water for 15mins 2)Add all ingredients to a food processor. Start on low speed & increase to high. Blend until smooth & creamy texture, scraping down sides occasionally. Add 1-2tbsp warm water if needed to blend. 3)Spread caramel layer on top of cooled crust & place tray in freezer for 30mins until caramel sets Chocolate Topping 1)Melt coconut oil in microwave and then immediately stir in all ingredients till combined (if any clumps remain, microwave 10sec) 2)Let cool slightly & pour on top of caramel. Place tray in fridge for 1hr until chocolate has completely hardened.
