Scullery is ALWAYS a key factor at every single event. The most important thing to know is how to properly store glasses in the the crates. This makes the job easier on the staff stacking the crates and the rental companies picking it up at the end of the night. So here are a few basic guidelines for everyone in the industry to follow: Stack the crates according to the style of glass onto a sturdy table or designated area. (Note: Label them if needed to ensure that ever...yone keeps it organized!) Always place DIRTY glassware right side up; clean glassware comes upside down because that is the way they are washed by rental companies! Make sure to have a dump bucket with a type of strainer for any waste/garnishes OR utilize a sink that can be used for beverages to dispose of LIQUIDS ONLY. (Note: Garnishes can ruin a sink that does now have a proper disposal and it’s better to assume that none of them do.) Coffee grounds are NOT to be disposed down a drain OR in slush buckets- you must throw them into the trash because they will plug the drain.
