Sometimes it's nice to treat yourself to a special breakfast when it's just you!
My favorite biscuit recipe--jalapeƱo cheddar. It's a cream based dough, so no butter! I used them to make Benedicts with cilantro hollandaise for a girls' brunch a few weekends ago.
Throwback to pre-Matt's vegan diet. I made baked apples stuffed with sausage from Fresno State. I was going to post a pic of vegan stuffed mushrooms that I made last night (I filled them with chopped up mushroom stems, grilled eggplant and super garlicky kale pesto) but even though they tasted great, they looked UGLY! Just a tray of brown lumps... I'm going to have to start working on my photography!
Have to get creative with the salads since we're mid-month on this mostly vegan diet. Baked tofu salad with rice wine vinegar pickled cucumbers and carrots. Dressing on the side since it's for lunch tomorrow--peanut butter, soy sauce, sriracha, leftover rice wine vinegar from pickling the vegetables.
FINALLY tried Janet's recommended pie crust recipe. I used it for coconut cream pie as well as topping some mini savory steak & veggie pies. It's a fantastic recipe and I'll be using it for my Pi Day Pie-Off.
Matt has discovered he likes kabocha squash! I braised it with soy and fish sauce. I love that the rind is edible.
Matt and I are trying a mostly vegan diet this month. I got bored and tried to turn my carrots into flowers. Miso soup with mushrooms, bean sprouts, scallions, tofu and carrot flowers.
Forgot to post this pic--smore's cookies that I made for a Fourth of July BBQ. I've been on a big smore's kick lately!
Made this Greek steak salad for tonight's dinner with leftover steak from last night's BBQ.
We wanted to open up a bottle of Timshel First Run and bought steaks to compliment the wine. What a great pair... what a great wine!
1 of the desserts was smore's pie. It was a good concept but way too much chocolate. Next time I'll even out the ratio of graham cracker crust to chocolate ganache to marshmallow.
Farida/Telly made an AMAZING gluten free pizza.
Had a neighbor BBQ last night. 1 of the appetizers was Fresno State sausages that Grandpa Dave gave us. Perfect with Sierra Nevada mustard.
