When clients ask for "healthy comfort food", yeah I got you!! Check out this turkey bacon wrapped turkey meat loaf!! Filled with lots of "hidden" veggies. Glazed with homemade ketchup. This dish is gluten, dairy and egg free (not that everyone wants that but this particular client did).... What are your favorite "healthy comfort foods"?

Why do I look so serious? Making edibles is so much fun!! And easy, learning to use all my new tools (toys) can take a few braincells (at first). Have you been curious about buy a @levo_oil ? Do you have questions you want to ask? I have had mine for a few weeks now and I learn a little more every time I use it and it really makes infusing foods super easy!!... I have also been using a Tcheck to check my dosing, that has been a much harder learning curve. Mainly because I think my 1st device was defective. But my new one is working well and I love being able to test my Infusion to confirm my math. Also fun to test my dispensary cannabis to see if they are giving the correct % on the label

My new @levo_oil has opened up a whole world of possibilities, like this raspberry and cannabis infused honey! With the Levo it's so some to infuse, I combined raspberry tea with my cannabis and let the machine do all the work. In a few hours I had cannabis honey. I dissolved the honey in warm water, added lime juice, Grand Mariner, white rum, fresh raspberries and coconut water. This delicious and refreshing cannabis cocktail is my idea of heaven.... Small side note: not everyone enjoys combining cannabis and alcohol. It's my preference to microdose the cannabis in my cocktails as well as use reduces amounts of alcohol. For a light enjoyable experience.

Grilling in January!?! Yup!! Welcome to Southern California. My trick to cooking fish on the grill and never having to worry about "sticking", is an easy 4 step process: STEP 1: Soak a cedar plank in cheap Chardonnay. The cheaper the best. The more "fake oak" flavor you can add to the wooden plank. This also keeps your plank for burning on the grill.... STEP 2: Cut citrus, limes grapefruit, etc. into slices and place them onto the cedar plank (after it has soaked for at least 30 min). STEP 3: Place (skin on is my preference but not required and you can always remove the skin after it cooks) salmon skin side down onto the cirrus. STEP 4: Set grill for indirect grilling and heat to medium-high. Place the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook until cooked through, around 20 to 30 minutes. The internal temperature should read 135 degrees F. Transfer the salmon and plank to a platter and serve right off the plank. YUP! IT'S JUST THAT EASY!! PREFECT EVERY TIME!a

One of the best things about these "new times", I get to celebrate everyone's special occasions. I have helped to celebrate birthday's, anniversaries, and any other celebrations that have had to be "rethought" this year. One group had a trip to Napa planned and instead that beacame a beautiful backyard 5 course meal perfectly paired with all their favorite wines.... I am so grateful that I get to help people to celebrate The dish in the picture is a beautiful double lamb chop, with pomegranate glaze and fresh pomegranate seeds. Served on a bed of creamy nutmeg polenta with roasted baby turnips and charred rainbow carrots.

How have you been effected by the pandemic? How have you had to reinvent yourself to save your business? These where the questions I was asked in an interview today. To be honest, until today I had not really thought about what I had done. I just did what I needed to do. I did what I felt was needed to move my business into this new and ever changing time we now live in. So here is what I have done:... 1) Created an online/ virtual presence with my business. This includes creating a Facebook group called "The Quarantined Kitchen". Creating virtual cooking class and cannabis educational events (I hope to live stream all my classes in my Facebook group). 2) Meet my client's "where they are at", that mean talking to client's about what they feel comfortable with and offer variations of my services. From traditional in home cooking experiences to setting up a mobile kitchen to cook on property with zero or minimal contact. 3) Working for @alicestable as the culinary host for virtual charcuterie workshops And most importantly being fluid, being able to shift and my move my services as they are needed to evolve with the every changing world we now live in.
