This comforting entree is one of our signature specialties and draws inspiration from @chef_serg_ortega’s childhood growing up in Michoacan, Mexico. Growing up in Mexico, I remember they would have these fairs once a year and there would be grilled quail, Ortega says. They were like the ...equivalent of corndogs at fairs here. The quails were simply grilled with salt and pepper and cooked on these long grills you could smell it from miles away. I would grab a few with a bucket of beer it was the best. We can’t wait to officially open our doors tomorrow! Fun facts: Chato’s is named after the grandfather of our co-founder Joey Sanchez. Both his grandfather and Chef Sergio Ortega share the same home state of Michoacan, Mexico.

Meet our award-winning head chef Sergio Ortega! A Michoacan native and longtime O.C. local, Chef Sergio draws inspiration from both his childhood dishes as well as his experiences working at notable restaurants in Orange County and around the world. At the heart of it, I just want to cook simple Mexican food, what I grew up eating and what I discovered during my travels and of course, my experience working as a professional chef over the years. Mexican cuisine has really become a part of Southern California culture but it’s really nuanced and varies from region to region, village to village and household to household. I’m hoping people that eat at Chato’s will find familiar flavors and dishes but I’d also love for them to discover that they’re eating a sauce they might have never even heard of.

Corundas: Michoacan-style tamales and Chef Sergio Ortega’s personal childhood favorite The corundas is very similar to the common tamales with the corn husks, says Chef Sergio, a Michoacan native. But, these are wrapped in green corn leaves and are a little creamier. Also, these tamales are vegetarian! They come with salsa roja, quesillo, coconut crema, and Hatch chile ragout. ... Join us! Chato’s Dog is head chef Sergio Ortega’s take on a street hot dog. The star of the dish? Chef’s hand-rolled pork and veal dog seasoned with dried Mexican chile powder and garlic. I’ve always been inclined to do things in-house as much as I can, says chef Sergio Ortega. I tried this really good sausage in Texas once at Black’s Barbecue in Lockhart. This sausage was off-the-hook and I wanted to replicate something similar. Everything I’ve seen in places I’ve been, I try to use it if I like it. Coming soon to Downtown Santa Ana!
