Honestly, delicata fries are the only way we eat the squash anymore. And we eat them A LOT. Rings/chips/fries/whatever you want to call em - they’re definitely trending these days, but we’ve got some signature moves we recommend: most important of which is to leave the seeds IN! Those seedy webs in the centers will get crispy and crunchy and mmmmm. We peel the whole squash in stripes before slicing, which eliminates any toughness but provides some structure to the whatchamacallits. Toss slices in oil and roast at 400 until golden, flipping once. Liberally sprinkle with flaky sea salt and plate em up! Bonus points: serve some aioli alongside for dipping (but they’re delicious on their own, so dip or don’t at your own discretion).

It feels so strange to be peddling winter squash during a heatwave... But believe it or not, it’s almost #decorativegourdseason, and ain’t Robin’s Koginut a cutie!? But tasty, first and foremost. A new winter squash this year on our farm, Koginut is a hybrid pumpkin developed by @row7seeds and @chefdanbarber. It touts the silkiness of kabocha squash and the rich flavor of a butternut. Can’t wait to hear your thoughts on this one! I’m already looking forward to eating a Koginut pie...
