A friend asked, what’s the different between tri-tip and #brisket. Brisket is the king of real BBQ. Culinarily speaking, the biggest difference is in the fat. Tri tip is fairly lean, while brisket has more intramuscular fat. So cooked brisket has a looser, juicier texture than cooked tri tip. They also come from totally different parts of the cow. Tri-tip is commonly cooked faster and served rare to medium rare and brisket is always cooked low and slow (10-12 hours) to bre...ak down the fats and collagen and tenderize the meat.
