Serving Sea Eel (Anago) is truly a labor of love. It takes a whole day to prepare and sheds light on where the Sushi Chef was trained. If the Chef was taught in the East (Tokyo style) the eel is cut from the back and if trained in the West (Osaka style) it is cut down the front center.
