Waking up on the beach never gets old We had planned to go to Japan and New York in 2020, which obviously didn’t happen So thankful we have been able to carve out these little staycations here and there!! What have been some of your favorite moments of 2020?

What a year we have all had...so much change, but also so many amazing opportunities that only arose due to us having to forego any plans we had for 2020. I am so thankful that this is the man I got to quarantine with We@ did all the home projects, built the garden, baked the bread, and watched all of Netflix. But, we also had so much fun together, laughing so hard at our inside jokes, really connecting and growing as a couple, and planning for our future. 2020 is a year we are never going to forget. What are your biggest takeaways from this year?

Fully embracing our first Christmas at home, just the two of us, in our 8+ years together. We are so thankful to that we are healthy, and so are our families. But, being away from our loved ones this year is hitting hard. We decided to take this opportunity to start our own family traditions this year The @delcoronado is one of my absolute favorite places to visit in San Diego, especially during the holidays ... What are you doing this year for the holidays??

Can you relax? Like really do nothing, and completely unplug? Friday was my last day of in person and zoom personal training clients for 2020. I always take the last 2 weeks of the year off to drive to Nor Cal and see all of @pablo_m_chavez and my family (it’s so nice that they all happen to be in Carmel/Pebble Beach and Santa Cruz & San Jose). We were actually supposed to drive up Friday to San Francisco for my bestie’s @noelleabihabib birthday, make the rounds and see the f...am, and come back Jan. 3rd... But, this year we are staying home the week of Christmas Can you believe this is our first Christmas just Pablo and me in 8 years?!? I may have not a bit overboard trying to make it special as we create our own holiday traditions Anyways, back to relaxing...I have this huge chunk of time to be at home and not have 35 personal training clients a week. I was legit overwhelmed by the idea, and decided I needed a new hobby I ordered all this craft stuff (I grew up crafting with my family), and I am planning to make all these cool resin projects Stay tuned...it may be a Pinterest vs. Reality situation So, how are you spending your holidays? Are you creating new traditions like us this year or is it business as usual for you? Any tips help me just chill?

Super Easy Italian Chopped Salad INGREDIENTS Salad... 2 heads of romaine lettuce 1 can (15 ounces) chickpeas, drained and rinsed 10-15 heirloom cherry tomatoes, cut into quarters 1/2 cup very thinly sliced red onion 1 cup chopped salami 1/2 cup chopped pepperoni 1 cup fresh mozzarella pearls, halved 1/3 cup thinly sliced pepperoncini Dressing 2 tablespoons freshly squeezed lemon juice 2 tablespoons Dijon mustard 3 tablespoons red wine vinegar 3 teaspoons white sugar 1 teaspoon dried oregano 1 teaspoon dried parsley 1 clove garlic (1/2 teaspoon minced) 1/3 cup olive oil salt and pepper

I cup old-fashioned rolled oats 2 cans (16oz) no-salt-added black beans, rinsed 1 cup chopped scallions 1/2 cup mayonnaise 2-3 tablespoons no-salt-added tomato paste 2 teaspoons curry powder Salt to taste 1 cup plain Greek yogurt (use cashew yogurt no my non-dairy friends) 4 tablespoons chopped fresh dill 2 tablespoons chopped fresh mint 2-3 tablespoons lemon juice 4 tablespoons extra-virgin olive oil 8 whole-wheat hamburger buns, toasted (I ate my leftover patties over a bed of grilled veggies with the yogurt sauce on top) 1 cup thinly sliced cucumber (I also chopped some up for in the sauce) - Step 1 Squeeze grated sweet potato with paper towels to remove excess moisture; place in a large bowl. Pulse oats in a food processor until finely ground; add to the bowl with the sweet potatoes. Add beans, scallions, mayonnaise, tomato paste, curry powder and salt to the bowl; mash the mixture together with your hands. Shape into four 1/2-inch-thick patties. Place the patties on a plate; refrigerate for 30 minutes. Step 2 Stir yogurt, dill, chopped cucumbers, mint and lemon juice together in a small bowl; set aside. Step 3 Heat oil in a large cast-iron skillet over medium-high heat. Add the patties; cook until golden brown, about 3 minutes per side. Step 4 Divide the yogurt sauce evenly among top and bottom bun halves. Top each bottom bun half with a burger and cucumber slices; replace top bun halves. Moroccan Spiced Salmon with Lemon Yogurt Sauce curtesy of @cookingclassy This is one of Pablo's favs, so i decided to share it with you all! . Ingredients: 4 (6 oz) skinless salmon fillets Spices including coriander, cumin, paprika, cinnamon, ginger, turmeric, nutmeg, cayenne pepper, salt and pepper... 1 Tbsp olive oil Plain Greek yogurt Heavy cream Lemon Garlic Fresh Cilantro Scroll below for printable recipe. Instructions: Let salmon rest at room temperature 10 minutes. Meanwhile, in a mixing bowl whisk together coriander, cumin, paprika, cinnamon, ginger, turmeric, nutmeg and cayenne pepper. Heat olive oil in a 12-inch non-stick skillet over medium-high heat. Season both sides of salmon with salt and pepper then sprinkle and rub both sides with the spice mixture. Cook salmon in skillet about 3 4 minutes per side. Plate and top with lemon yogurt sauce and garnish with cilantro. In a small mixing bowl whisk together yogurt, cream, zest, juice, garlic and cilantro, season lightly with salt and pepper. Let rest at room temperature while preparing salmon (or gently warm in microwave, you don’t want cold sauce on warm salmon). See more
