Some are celebrating March 27 th as National Spanish Paella Day. Paella is similar to biryani: it is made of rice, meats and vegetables and is flavored with saffron. Perhaps this day should be called national biryani and paella day!... The main difference between the two regional specialties is the rice. Spanish paella is made with short-grain rice, while Indian/Pakistani biryani is made with long-grain rice. We make five kinds of biryanichicken, lamb, goat, beef and vegetable, and on Sunday, we prepare our special, slow-cooked chicken dum biryani.
