Lunchtime salads during the past four days. Always a bed of chopped greens beneath arugula, kale, spinach, and romaine or herb greens. A cornucopia of luscious flavors, colors, fiber, and nutrients. Recipes on my website for preparing the salads (see cooking show video), and for the specialty items Curried Tofu, Raisin & Almond Salad; Shiitake Mushroom Fermented Black Bean Green Beans; Favorite Carrot & Raisin Salad. For added flavor purple sweet potatoes, jicama, red rad...ishes, sugar snap peas, papaya, garlic sautéed beet greens, red grapes, baked plantains, apples, raw zucchini, kiwi fruit, English cucumber, sugar snap peas, and roasted beets.
