Born and raised in France, I am a French teacher who has graduated with the DAEFLE teaching degree from the Alliance Française de Paris and with a Master in Arts, Literature and Linguistics with a specialization in teaching French as a second language. Additionally, after graduating with a Bachelor in Sociology at the University of Paris VIII, I worked as a sociocultural coordinator for 5 years in the vibrant Belleville neighborhood in Paris. [Saturday Recipe] This Saturday, re-discover Nomandie through the classic "Tarte aux pommes Normande". It is apple-picking season here in France, so here's how to make the most of it get the recipe in French thanks to @hanane_et_ses_délices... Here is our English translation: (Take out your scale because our recipes are in grams!) For the dough (pâte sablée): -120g of butter - 260g of all purpose flour - 40g of fine sugar - 1 packet of vanilla sugar (or 1tsp of vanilla extract) - 1 egg - 1 tsp of salt For the filling: - 50g of almond powder - 200g of heavy cream - 3 eggs - 60g of sugar - 1 Tbsp of vanilla extract - 5 apples - 1 lemon Add the butter (cut up into pieces), flour, and mix it together in your stand mixer (or by hand if you don't have one ) at medium speed. Add the sugars, the egg and the salt. Keep on whisking until your dough is lump-free, but don't over-knead it. Wrap it in cling-wrap and leave it in the fridge for 1 hour. Roll out the dough, line a large tart tin (removable bottom preferred) and put it back in the fridge while you prepare the filling. Peel and cut up the into thin slices. Dip them in juice to avoid oxidation. In a large bowl, whisk (vigorously) together the eggs, almond powder, heavy cream, the sugar and vanilla extract. Place the apple slices on the dough just like in the picture (or try your best!) and add the filling mixture on top. Place your Tarte aux pommes Normande in a preheated oven at 180C (350F) for 40 to 45 minutes. Keep an eye on your tarte towards the end, as each oven is different and can cook either faster or slower. Serve warm and add any topping desired. ( really anything your want!)
